One does not have to venture far or seek out concealed drinking establishments to find people relishing the combination of salt and spirits. It's likely occurring at this very moment, just nearby, in any neighborhood bar, college spot, or lesser-known pub you happen to be close to. The shot glasses are being clinked together, and soon enough, the classic trio of tequila, salt, and lime wedges will undoubtedly appear.

These essential components for tequila shots were humorously dubbed "training wheels" during my bartending education. The joke was that this salt and lime ritual was intended for beginners, while seasoned drinkers could bypass such embellishments. It was the early 2000s, and I had yet to learn about Charles H. Baker Jr. and how the esteemed food and drink travel author had documented this very tradition with locals in Mexico in his 1939 work.

The Gentleman's Companion. However, perhaps we can pardon the bartenders of that time for being a bit misinformed, at least concerning salt. In contrast to its flavor companions—sweet, bitter, sour, and umami—that humans can detect through taste, salt has always been (and still is) the most puzzling, from a scientific perspective.
