Evaporated salt is recovered from these solutions using artificial heat in regions where bedded deposits can be solution-mined. Natural brine or sun salt are also used to make some evaporated salt. Brine was previously concentrated in open pans over fire. Steam-jacketed boats have recently been employed. Rock salt accounts for the majority of salt produced in colder climates. The most evaporated salt is generated by multiple-effect vacuum evaporators, and a significant proportion is produced by open crystallizers or grainers, which produce a type of crystal favoured for usage in various food sectors. Natural or artificial brine is initially pumped into settling tanks, where calcium and magnesium compounds can be removed chemically. The settled and filtered brine is fed to the grainer, a long open trough heated with steam coils, in grainer operations. The brine is delivered into the grainer at almost the same pace as evaporation and at a temperature only slightly lower than the brine in the grainer. The brine residue, or bitterns, can be removed constantly, once a day, or less frequently. The crystals form as a result of evaporation at the liquid's surface. They cling to the brine's surface tension and persist at the surface. The top edges of the crystal develop, forming a little inverted hollow pyramid, or hopper.The hopper eventually sinks and stops growing. The salt is mostly in the shape of flakes when the crystals are collected, hence the term flake salt.

When using multiple-effect evaporators, the vacuum in each vessel is controlled so that the vapour from the first vessel is hot enough to boil the brine in the second, with the vapour from the second providing heat to run the third vessel or effect. The brine is typically passed through the stages or effects in order, though in the case of salt production, new brine can be given to each stage if needed. The Alberger process is a vacuum-pan and grainer operation in which cubic crystals are created in the solution given to the grainer pans through partial vacuum-pan evaporation. The grainer's seed crystals generate a salt that is a blend of grainer- type flake and flake developed on seed crystals. One ton of salt requires around 1,360 kg (3,000 pounds) of steam.
